The main reason I just love this Easy Cucumber Salad is that it pairs well with pretty much any main dish. We love to keep it on hand in this household all week long, and add it to work lunches or sides for dinner. It takes less than 5 minutes to make, and is even better after it’s soaked up all the delicious flavors from the dressing over night one. Another reason I love this salad is because you can increase or decrease the sweetness and vinegar content easily to fit your flavor preference.

What you’ll need for Easy Cucumber Salad:

  • 2 medium cucumbers
  • 1/2 cup avocado mayo – I like Chosen Foods brand best
  • 2 tbsp apple cider vinegar – I like Braggs
  • 1 tbsp seasoned rice vinegar
  • 2-4 tbsp red wine vinegar (depending how vinegar-y/thin you prefer the dressing)
  • 1/2-1 tbsp monk fruit sugar (to keep blood sugar friendly, but any sugar of choice can be used)
  • 1/2-1 tbsp dried dill (depending on flavor preference)
  • 1 tsp fine or course sea salt
  • 1 tsp ground black pepper
  • 1 tsp garlic powder

Ingredient Notes:

Cucumbers – Any type of cucumbers can be used and work fine for this recipe. Making sure they’re not sliced too thick is the key

Mayo – I love using Chosen Foods avocado oil mayo for this recipe, but any mayo of choice works great

Vinegars – I use a blend of red wine vinegar, seasoned rice vinegar, and apple cider vinegar. If you prefer to just use one, I would recommend red wine vinegar

Seasonings – a simple blend of salt, pepper, garlic powder and dill brings the flavors in the dressing for this Easy Cucumber Salad to life. Garlic powder can be omitted, but I wouldn’t recommend omitting any of the other seasonings

Monk Fruit Sugar – I love monk fruit sugar because it’s blood sugar friendly. Regular granulated sugar works just fine if you don’t have monk fruit sugar

How to make Easy Cucumber Salad:

  • Peel cucumbers and cut in half the short way, then again the long way, and cut into about 1/2 inch chunks
  • Transfer to a mixing bowl or a storage bowl large enough to easily mix dressing in with cucumbers
  • In a separate bowl, whisk together all dressing ingredients until well-combined
  • Pour dressing over cucumbers and mix
  • Serve immediately, or allow to sit in the fridge for 1-2 hours to soak up dressing flavors – even better soaked over night!
  • Store in an airtight container in the fridge for up to 5 days
  • Enjoy!
